This release comes from a Ghost Distillery and has spent two years maturing in a Sherry cask, imparting a deep, dark red color to the whiskey. Additionally, this is their first Phoenix release, a project where The Whiskey Lab had a significant influence on both the design and color scheme. The concept was initially discussed by Ross and Jay as a potential bottling for the Girvan 27-year-old, before the inception of Whispering Waters.

Immortal, powerful, the mighty Phoenix rising from the fire symbolizes regeneration and hope, born of great experience and knowledge dating back to the time of Creation.

Allied to the sun which ripens the grain, the Phoenix spreads its wings and soars above the mountains and valleys of Scotland, generating new life, healing and harmony from the ashes of old -now golden and strong, familiar yet aged, fresh yet everlasting.  A creature of contrasts and surprises; a primal force reborn and continually renewed.

NOSE

Wonderfully complex with a pronounced sweet Sherry lead, enriched by layers of dried fig, fresh marzipan, and vanilla cream custard. With water, it evolves to reveal caramel, toffee, and muscovado sugar, accompanied by hints of sweet ripe banana.

PALATE

An elegant sherry sweetness tops a base of raisins, enhanced with toffee, caramel, clove, and star anise, leading to a rich mouthfeel. Adding water brings out beautifully-rounded smoothness with notes of sweet dates, raisins, and cloves.

FINISH

A generous finish where fruitiness gives way to spices including nutmeg and clove. With water, a gentle sweetness unfolds, leading to richer candied fruits and a soft peppery finish.
